De kan v\u00e6re alt fra fl\u00f8temyke til smuldrete i konsistensen. Saltpreget i ostene krever balanse fra s\u00f8dme i vinen. Den kraftige smaken i osten fordrer ogs\u00e5 mye konsentrasjon i vinen. Derfor er dessertviner og s\u00f8te sterkviner gode alternativer. Til denne typen ost er en s\u00f8t, men samtidig frisk Sauternes ofte et ypperlig valg.
