De er alle smaksrike og kan ofte ha en litt n\u00f8tteaktig karakter. Dermed speiles de smaksmessig godt i hvitviner som har f\u00e5tt modne seg p\u00e5 bunnfall og fat. Denne modningen gir nemlig ofte en del karakter og preg av ristede n\u00f8tter.<br><\/li>\n\n\n\n<li>Smaken avhenger av&nbsp;<em>\u00e5rstiden ostene produseres p\u00e5<\/em>&nbsp;(i mai er kuene ute og spiser gress og blomster, noe som gir komplekse og smaksrike oster) og&nbsp;<em>hvor lenge osten har v\u00e6rt lagret,<\/em> normalt mellom to og 36 m\u00e5neder. En smaksrik hard ost passer best sammen med en smaksrik r\u00f8dvin.
